GOURMET WOODS is a small, custom wood shop specializing in building the absolute best butcher-block style (end grain) cutting boards available anywhere. We build all our boards by hand, one at a time, using the very best quality woods available. 

Our signature product is our customer-defined inlay. The inlays are designed into the board as it is built and are about 1/8" thick and glued into the board using 100% food-safe waterproof glue. This process results in the inlay being completely integrated into the board, providing a second cutting surface, although we do recommend only light cutting in order to preserve the appearance of the inlay. Inlay woods are selected to provide the best contrast between the board and the inlay. We traditionally use very dark woods, such as Bubinga or Jotoba, on the all maple boards and "bright" (side grain) maple on the mixed-species boards. Examples of these different combinations are displayed in the photographs used here.

Handle cavities are built into the ends of the board to provide easy handling.

GOURMET WOODS cutting boards are available with a food-grade mineral oil (cutting board oil) finish or a varnish (salad bowl) finish. The varnish finish serves to seal the wood grain and add to the surface durability of the board.  The inlay (display) side of the board receives 3 coats of hand-rubbed satin finish varnish to produce a low luster furniture grade appearance. The working surface is slightly sealed with a "wipe-on, wipe-off" coating of varnish. This enhances the overall durability of the surface, keeps the mineral oil closer to the surface and reduces the amount of oil your board will "drink." Mineral oil is used to condition and preserve the board during use just as with boards finished with only oil, but the amount of oil needed, as well as the frequency of re-oiling, is reduced.  This finish has proven to be the best approach to preserving the appearance and long-term servicability of the cutting board. We will inform you of the "food safe" date of your board since the varnish finish must cure for 30 days before it is completely safe for use around food.

We use only 100% food safe glues and finishes on our boards.

Every GOURMET WOODS cutting board comes with a stand to keep your board up off the counter when not in use (we always store our board up off the counter, don't we?) and to display your board at its best.

Special features, such as ovals and "offset" inlays are available on request. Costs for special features are negotiated on a case-by-case basis at the time of ordering. We do not do copyrighted logos, photographs or symbols.
